The Story
Named after the port of Santos through which most Brazilian coffee has shipped for centuries, this lot comes from fazendas in the Cerrado Mineiro region of Minas Gerais. The flat, sun-drenched plateaus here are ideal for natural processing, where whole cherries dry on concrete patios for three weeks, allowing fruit sugars to ferment gently into the bean. The result is a silky, low-acid cup with roasted peanut, milk chocolate, and a subtle dried fruit sweetness.
