The Story
Colombia has emerged as an unexpected champion of the Gesha variety, and our lot from Finca El Paraíso in Cauca department shows why. Farmer Hugo Carvajal planted Gesha seeds at 2,000 meters—higher than almost any farm in the country—where nighttime temperatures drop near freezing, drastically slowing cherry development and concentrating sugars over a 10-month growing cycle. Washed in controlled fermentation tanks with precise temperature monitoring, the result is a perfumed, almost ethereal cup: ripe white peach, dried lavender, and a brown sugar sweetness that builds through a long, clean finish. This Geisha is a showstopper. Incredibly aromatic with layers of stone fruit and florals. We roast it exceptionally light to preserve every nuance of the cultivar.
